Sorry for the delay, had to wait for my brain to work. No clue if any of this is in your wheelhouse, but things I would pay money for:
1) Someone de-googling smart phones, loading with simple non-skeevy OS, and basic FOSS apps. I don't have chuff/skill to set up my own.
2) some lil remote driven box to run streaming through. Like apple box, but not skeevy.
3) I am sure there are tonnes of #spoonies who would be interested in simple health tracking apps.
